ZUCCHINI BREAD
Ingredients:
2 cups shredded raw zucchini (skin and all)
2 cups sugar
1 cup oil
3 eggs
1 tsp vanilla
3 cups flour
1/4 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 tsp each of cinnamon, ginger and ground cloves (NOTE: I tend to be reeeeally generous with my teaspoons of the spices. Too much is never enough!!)
1 cup chopped walnuts (optional)
1 cup chocolate chips
Preparation:
Preheat the oven to 325 degrees. In mixing bowl, combine sugar, oil, eggs, vanilla and zucchini. Mix until well-blended. Sift together flour, baking powder, baking soada, salt and spices. Add to zucchini mix, beating until well-blended. Stir in walnuts and chocolate chips if you choose to use them. (You can also just put them on the top of the batter once you've put it all into the pan.) Transfer the batter into 2 greased (with oil/shortening and flour or with cooking spray) loaf pans and bake for about 1 hour. Remove from oven when the bread tests done by a knife test. Cool for 20 minutes, then remove from pans. Bread slices best when totally cool. Bread also freezes well wrapped tightly in aluminum foil.
